It's not possible to revert back.
There's a link on the bottom right of the message page you can click to submit feedback on the new format. Those comments go to the product developers.
Submit your feedback - be constructive and specific if you want your comments to be taken into account. Simply saying "I hate it" means the feedback will probably be ignored.

I sent an 'I hate it' remark, but there is no submit button. I had to just hit the X button to get back out. What do we do?

I think it's a waste of time to send an "I hate it" comment. Say what specifically isn't working for you otherwise the feedback doesn't give the developers anything to work with @moondogblues .
Saying "I hate it" is like someone coming here because they are having problems with a shipping label and saying "it doesn't work" - OK that gives me nothing to go on to help that person. They need to provide some clues like if it's a problem generating the label, printing a label, downloading a label? If they're on the web or the app? If services are grayed out, if there's an error message, etc. I need something to go on to help fix the problem. "It doesn't work" doesn't tell me anything about what part of the process isn't working and why.
That said, there should be an obvious blue Send button and if you're not seeing it, maybe you have your screen zoomed in really big so it's getting cut off? Try to zoom out your browser view. Or you may need to just scroll down?
An example of a specific / constructive comment:
I would prefer if the top message was not automatically marked as read upon opening msgs.
Here's a common complaint I've seen among users, and a way to submit feedback:
I would like all 3 panels to be collapsible/expandable so I can see either the message list take up screen width (easier to find messages), or the message body take up screen width (easier to read messages), and not be forced into a narrow paneled view.

OK I found it and my message to eBay was----------------"Can you give us the option of returning to the old style, I like to check out who is contacting me, just in case I want to add them to my block list."

Why can't you do that in the new messaging? I have a link to the buyer's account right at the top of the chat, and I can click and see all the usual details just like before (actually easier than before, I think their username wasn't clickable before). It's actually quite simple.
Don't be too block happy though. Most sellers are a little too paranoid I think.

I know it has probably been discussed, but I'm wondering if the option to send an offer on the first message is now gone or have I missed how to do it? I had the option button available on my email, but when I clicked to send an offer I went to the new message board & couldn't see a way to complete the offer.

This has about as much of a chance of happening as eBay returning to no FVFs on shipping and sales tax.

First I'm not a Happy Blocker, second everything has a work around, however WHY? should eBay put it's seller thru this non sense every Whip Stitch, every other week it seems there is some kind of change, they should use the Kelly Johnson method, KISS-----Keep It Simple Stupid-----If it takes a College Professor to figure it out It WON'T Work.

The option is still there. This is the first message I received from this potential buyer- I responded and can still look back at it, see now both his message and mine, as well as the 'send offer button' (which I clicked, the 'send offer' came up in which I would fill out an amount and then click 'enter' (but didn't because I don't want to send an offer)).
Note that not all items are available to send an offer (for whatever reason?) as I know when I click on my Active Items, there are 600, but shows only 500 (or so) available to 'send offer'...I assume because there's no watchers?).

It's there shown in above screenshot. But:
It has to be someone eBay considers an "interested buyer" and one that hasn't received a prior SIO on that item and one that doesn't have seller offers blocked in their communication preferences.
And it doesn't work on variation listings which I don't think applies to you.

You can do that by clicking on the buyer's ID - same as with the old message format.

I wouldn't consider it a work-around. Just click on the buyer's ID, same as before.

Well the Feedback button was in the bottom right on my screen, I gave them 1 Star and complained, the squeaking wheel gets the grease, it will take more than just me, if you don't believe me, take a look at Tuesday 5th 2024.
