By offering it for sale and seeing what you get, because it is worth what someone is willing to pay for it.
But to get an idea of what you might use to price your items, you study comparable ones. Use eBay's Advanced Search and look at Completed Listings for the same, or comparable, items. Note the prices in green are sold prices; but also note that "sold" does not mean "paid for," and be dubious of any sold prices that seem far higher than the norm.

When you want to sell something on eBay, it is best to find out what other eBay buyers have spent for the same or similar things.
On the page that shows up when you first open eBay, you'll see near the top a blank field containing the words "Search for anything." To the right of that, you'll see "All Categories", a blue button that says "Search", and then in smaller letters and fainter print -- "Advanced." Click on "Advanced."
You are taken to a chart that you complete with the search items you want, whatever words you think will match the titles of other listings. Maybe -- Disney, Collectable, Jasmine or any other specific princess.
In the same field, you can use the drop-down menu to find the proper category: Dolls & Bears.
The next field is where you can check off whether you want to see listings that sold or listings that are completed. I like to check "completed" which will also include sold items. The prices on sold items will be in green print.
Then scroll on down to the bottom. (Don't bother checking off any other options.)
Click on the button that says "Search."
Et voila. There they are, with the most recently completed listing at the top.
BTW, looks like a Jasmine doll sold today for $52.00!

Value can fluctuate from day to day, listing to listing, even for the same item. If the right person sees it, the market value means nothing if they will pay well over that.
As another poster pointed out...the important thing is it's value to you.

list it as an auction on ebay for 7 days starting at 1 cent with free shipping and you will find out the value in seven days.
