What do you do when someone buys a gold ring from you then says they want to return it
but all they send back is the box it was delivered in?
And ebay says they are going to refund their money from my bank account

Tell your buyer you checked the weight on the package received, and it was apparently shipped empty (compare original/received postal weights since it was the same box). Let him know it is your policy to report all cases of theft and fraud with police in your city and in the destination city as well as Postal Fraud and other government and internet agencies. Ask him to please cooperate with any investigations and check if the item might have slipped out by accident before packaging or what might have happened.
Approve any return requests. Include police reports with your eBay appeal for full refund. Be sure to block buyer and report buyer for theft to eBay. While not certain, there is a possibility that eBay will refund you if a police report is included.
I am pretty lenient with buyers, but when it comes to 100% Theft/Fraud I am willing to go the extra mile.

There is also the possibility of civil court depending on time/distance/value/commitment
Top rated sellers and some other conditions allow for a 50% deduction on the refund if the item is not in the same condition as your buyer received.

Try this:
File a mail fraud report with usps.gov
File an internet fraud report with ic3.gov
File a fraud report with your local police
File a fraud report with the buyer's local police.
Report the buyer to ebay.
The first four are usually doable on-line and should give you report numbers. Save those report numbers.
Contact ebay CS with all those report numbers and ask that the case be decided in your favor.
