I'm wondering if people are printing the 'packing slip' provided by eBay for each purchase? I'm wasting lots of paper doing this by because it prints on a half sheet. Is there another option? Do you use a business card or send a thank you card? I don't know what to do about this.

Packing slips are pointless. Save the paper.

Part of my sheet of paper is the shipping label.
On that side of the paper is also the "online Label Record" for my files, and also to make sure that I pack the right item in the box that I am putting the label on.
Flip the sheet of paper over, and print a packing slip.
That way buyers always know purchase it was, and who/where it came from.
Laser printer that I refill. Paper is cheap.

One less tree isn’t going make a difference. As I look out the window of my home there are trees, trees, trees, and more trees.

I do a packing slip a) so I can match up the product with the postage label, and b) in case the buyer purchased similar stuff from other sellers, I want them to know that they got mine, and to avoid misdirected complaints if they got junk from someone else.

Some do and some don't. You should always include address inside packages in case the label gets damaged in transit.

I don't do packing slips. I do include a cross between a thank you card and a business card so the package can be tied back to my seller ID.

On my other selling ID most of my customers are businesses, and they are use to getting a packing slip to properly log in a delivery.
My non business buyer, may or may not care, but it is the professional thing to do. It also allows a place to add other information or ads.
For me when shipping I need packing slips to make sure I am putting the right thing in the right box and to double check the shipping label matches.
If you have a 4"x6" thermal printer for shipping labels, it will also nicely print the packing slip by just using the fit to page option. Some third party services like Pirate Ship will even interleave packing slips and shipping labels, which is especially nice for higher volume sellers.
