I've been trying to create a listing draft for a games console with variations and failing miserably. For example, I'd like to list a Nintendo Wii console with the option to add extra controllers, and accessories. Why is this so hard/impossible?

You can if the price will be the same. Not for customers to 'add' other items that are different costs as variations ONLY allow 1 item to be chosen. Customer would then have to find your 'other' listing.
Best to just list a console with remotes (why would anyone want one any other way?) and do separate listings.

Just list the items separate.
You will have issues if try to do variations as you are.
If you list the console, then multiple other ways to buy, do you have multiple consoles?
Asking because someone could buy 1 console and someone else buy 1 console with extra controllers.

@dragonzbreath It depends on what category you're selling in. Some categories allow variations, others don't.
I googled 'how to list game console with variations on ebay' and came up with:

@klhmdg has the right answer. If you list the variations the way you're planning, you'll end up with two consoles being listed for sale (one with controllers, one without), or more depending on how many variations you set up. Better to list each item or group of items completely separately, so the console on it's own or with however many controllers (but only one listing), and then any additional controllers or accessories as separate listings. Anyone that wants to can find your other listings easily, so someone may purchase multiple listings from you fairly easily.

Customers hate variation listings. Want to not sell something, then put it in a variation listing.

Since those are different items, they need their own listings.

there are things that variations are very good for but not vtg game items.
Bolts are a great place to use variations and this type item is what I think they were intended for.

I think you're missing the point of listing variations. The point is to entice people to buy extras while viewing the listing. So long as I have the stock, I don't believe this will be an issue at all.

Why is this so hard/impossible?
Because eBay does not really support that concept.

Hello ,
I sale video game and consoles. I have sold variations of consoles. but never sold controllers options.
I have seen people create listing with different variations but it sounds possible. each variation will have to be separate inside the listing and they would have the option to bundle what items they want.
I created a wii mario cart bundle as an experiment this way last year and it worked wonderfully. I had many mario games with the options of different wii steering wheels in different colors to add as a custom bundle. I also added mario games with manual and without manuals as an option.I couldnt keep that listing filled long enough and fast enough. Some buyers bought one game plus 4 wii steering wheels others just bought wheels and it helped me get rid of a lot of wii wheels that I had sitting waiting to be sold.
I am here to say it could work but it will be difficult.
