I've been trying to create a listing draft for a games console with
variations and failing miserably. For example, I'd like to list a
Nintendo Wii console with the option to add extra controllers, and
accessories. Why is this so hard/impossible?

This is the missing piece of the puzzle and makes sense.
I think you're missing the point of listing variations. The point is to
entice people to buy extras while viewing the listing. So long as I have
the stock, I don't believe this will be an issue at all.
