This is not a shipping issue. This has nothing to do with shipping and returns. This is a seller issue.
While i was packing orders last night, i noticed that when printing a label, items that would usually default to First Class Mail were now defaulting to Priority Mail. I had to manually click First Class Mail. These were all items weighing less than a pound.
Is anyone else experiencing this?

Same here since Monday. Very frustrating.

Yes, it happened to me today. An item weighing less than 6 ounces was set at Priority Mail for $7.27. I thought that can't be right. When I looked at the Postage, Priority Mail was checked rather than First Class Mail which the buyer had selected.
I had to manually change it back to First Class Package where the cost was more reasonable and affordable considering the cost of the item and its light weight.

Yep, same here. The issue came up several times in Community Chat today and has been reported.

Apparently, if you can go in the the bulk shipping option, it reverts back to the original option.
There have been a few threads about this in the past couple/few days. Others have reported the same issue. Rates are showing one level up from the original option.
I didn’t do enough reading through the threads to see if there was anyone at eBay trying to fix it, or if this is the new normal.

Yes, I see this all the time when printing single labels! It's annoying since in my business policies I have chosen first class mail for my listings. In a rush someone may actually choose this over first class shipping or this may be very confusing to new sellers. I also find the note at the top stating that USPS is having problems equally annoying This does not show up in bulk label printing. I also see a small highlighted box " buyer selected" after first class shipping, yet it does not default to this 🤔.

It is without question annoying. I am really hoping it goes back "buyer selected" soon.

But, doesn't ebay get their cut of the shipping cost, too? Definitely a bonus for them when a seller doesn't notice, I would think.

EBay only gets fees based on what the buyer paid so this doesn't benefit them.
I was told in the weekly chat that this is not on purpose and is a glitch that has been reported.
How soon it's fixed though is anyone's guess

This has actually been happening for weeks now.
I first noticed it a few weeks back after the label page changed to the idiotic reverse dimension boxes (about the same time as the arrows in the boxes experiment).
Labels that were in the listing as same price to all FCP were suddenly defaulting to Fedex (a service I have never used on ebay). At first I thought perhaps I'd fat fingered when choosing the shipping service as Fedex is right under FCP on the drop down, and it was totally random, not happening on every label.
But then it started defaulting to PM on FCP etc etc (and to Fedex a LOT of the time) and I knew it wasn't my doing.

Yes--all of these people are, and this is just from the first two screens of the Shipping & Returns board list of threads. Maybe should've checked there, even though you think it's the wrong board?
First Class small items now defaulting to priority labels by eBay....
Shipping option defaults to priority when buying labels. WTH eBay?

Every single order! I'm not into conspiracy theories, but I do assume that eBay is upping shipping to provide a better customer service. No, I'm not shipping $20 items with an extra $4 in shipping and handling costs!

I think @inhawaii wanted to discuss this as a seller issue. I don't think it's a glitch though - it seems to have been formalised into this trickery. I was happy with the shipping page until this and answered the survey telling them that we're not children and don't need to be led by the nose.

But, ebay sells the labels, right? Over the years, it has seemed to me that ebay doesn't do anything for free or with no return. Of course, that's their 'job', so to speak.
