I bid on a Nintendo Switch listed as the newer OLED model (HEG-001), but after reviewing the images more closely I realize that it is definitely the older model (HAC-001). I have tried contacting the seller about this multiple times over the last four days, asking to have my bid cancelled. Each time, the seller assures me that the description is correct, yet they refuse to provide any photo evidence. What is the best course of action for me if I end up winning this auction?

I admire your conscientiousness. But you should just go ahead and retract the bid anyway. Choose the "changed description" option. I have never heard of eBay investigating the reason chosen for a retraction, nor of any member being penalized for their bid retractions, not even those who have racked up hundreds of them.

If you end up winning this item, pay for it and then receive an item that's NAD, you can open an NAD case and will most likely win it. However, it would be better for the seller to agree to your request and just cancel. If events transpire as described above, you will open that case, seller will be required to send you a prepaid return label and to refund in total when he gets it back.

You can do a retraction on your bid if it's not too late yet. Easy to do.
A seller puts a lot of work into setting up an auction.
Its your mistake and not the seller's mistake.
Seller might cancel the sale after its over...you might not even win.
"tried contacting the seller....over four days"...seller needs not to answer emails...seller could be busy with other things.
If it was me I would cancel your bid and block you from further auctions...sounds like too much drama.

My impression from the OP's message was that he wanted to cancel a bid, not that he had already bought and paid for the item. So I was in error?

I’d like to avoid any course of action where I pay for this item, even if it’s with the expectation of an eventual refund.

@jsem9321 unless you were required to 'pre sign up with credit card' and you simply have to 'pay if you win', then just DO NOT pay. You will get a 'strike' but you are allowed 2 in a year so if it's not a habit, not a problem...
BUT- know that MANY sell items using the same 'listing' and change the title, but NOT the picture...so if the seller states 'don't worry, description/model is correct'- as stated, you can easily open a 'Not As Described' return for refund (and seller would have to pay for return shipping )

You can tell the seller that he should cancel your bid because you have no intention of paying for it and it will take him a week or more to relist it .

I think seller changed the description fits. The description is not correct.
If this is your first retraction, then you should be okay. Just don't make a habit of it. Excessive retractions can get you suspended.

What is excessive?
I was bidding on an auction and notice another bidder who had 63 bid retractions in one month and 652 bid retractions in 12 months.
I always look at bottom of other bidders to see if they have done any retractions.
