I am confused. I have received a few emails from Ebay telling me my item is arriving early... but it never does. On the latest item, it hasn't arrived by the date I was told and according to the USPS, it is arriving late, but still coming. It appears "lost" in the system on tracking and now I don't know when it is arriving. I want to opt out of these emails from Ebay, as they are never true and really just make me mad at them as well as the PO. It is a lie by someone and I'd like to find out who's responsible.

Don't worry about who's responsible. Go to your Account Settings/Account Preferences/Communications Preferences and tweak the 'Delivery Options' setting. Good luck.

For my Canadian 2 cents worth the estimates provided by/within eBay are optimistic guesses at best. The amounts provided can change for multiple reasons. Everything from miss-sorts(Should have gone express...ended up going standard), re-routing, staff sickness problems, equipment malfunctions, weather, system backlogs, holidays, syncing systems errors and for anything that has to process through customs the same list plus customs hold ups. Estimates for parcels to the USA from Canada routinely show 4 to 7 -9 days to Anywhere USA with little variation based on service. (Majority show 4 to 8 days- chuckle chuckle...ya right!!) It takes a minimum 4 days based on my location for parcels to arrive at either LAX/SF. Move 1 province over or somewhere rural and it shows same estimates.
Parcels destined to EU countries estimates are all over the map. In technical terms entirely whackadoodle. According to local Intl websites it clearly states expect delays due to VAT Collection procedures which changed a few months ago.
The only thing sellers can control is shipping in a timely manner with the service the buyer paid for. After that control goes out the window for delivery delays. Situations they CAN'T control. I make any checks of online tracking (CP/USPS etc) first vs eBay tracking as standard procedure. The systems are rarely in 100 % sync. After that I only look for updates to expected and out for delivery. Everything else is cross fingers and hope!! If you do get early delivery....It means everything went right. Score one for you!!

Regarding tweaking, if you use anything that is tracked, Ebay shows the parcel on the meter(Canada) as soon as either the label gets created or it's first depot scan. Inflated handling time has been a suggested workaround for non-tracked services for several years. Not sure if things work exactly the same way on dot com. Canadian sellers repeatedly have reported discrepancies between suggested standard options(guesstimates) from ebay vs Canadapost standards (guesstimates). eBay's estimates are routinely very light. We've had zero luck in getting them fixed to something close to almost kind of nearly approaching accurate. I believe that is called Champagne wishes and caviar dreams or the song Dreamer by Supertramp!!

Agreed that the Postal Service and the EDD system are a bit whackadoodle. I was only addressing the OPs statement, "I want to opt out of these emails from Ebay, as they are never true and really just make me mad at them as well as the PO."
If the emails made me so upset, I'd want to avoid them, too. 😑

Trying to guess when a package will arrive is like fortune telling, not always right. Buyers like to know but, it can cause problems when it's wrong. Just another double edged sword sellers have to deal with.
