If, as a seller of an item via auction, I am unhappy with a final bid price, then can I bid on it and pay the fees to stop from selling it?

No, not only are you not allowed to bid on your own item, it's impossible to do. Bidding on your own item using another account is also a policy violation.
In the future, you should always start the bidding at the least amount you'd be happy with if you receive only one bid.
BTW, you have eight days left on your auction. That's a lot of time for more bidding to occur if there is interest in your cards. Most bidding happen at the end of an auction.

If you are unhappy about the final bidding price, it means that you entered the minimum/starting bid too low when you listed it. Always enter your starting bid/minimun price at the least amount you want to accept to sell your item.
NO, you absolutely can NOT bid on your own listing.
