Can I change an existing non-variation listing to one with variations?

I have sold 150 items over a couple of years and really want to keep that statistic so that people know that it's a good item, but now I want to add a couple variations (other parts that fit with this item) and I'm afraid I can't... Is there any way ...

Can someone just "make up" their own return policy?
