I recently dropped off about a dozen items to ship at my local post office. Only 3 of the items got scanned and the rest all say label created, USPS still awaiting item. I’ve never had this happen so I’m concerned my buyers won’t receive their items at all. I’m curious if it’ll update if another post office scans it at the next checkpoint? And is there any way to have this not affect my late shipping?

First of all, do not contact buyers...let them contact you first. Don't open a "can of worms".
Not everything gets scanned but does usually get delivered.
I still have items from March 2023...ha...still in transit...but got positive feedbacks from the buyers.

Recently, I have been seeing significant delays in which hub is the first to scan my media mail.
You seem to have sold media so if they are what has not been scanned, and other classes of mail have, you may be experiencing the same behavior.

I had that happen a week ago. Dropped off a package on Friday, no scan until it left on Monday.
Been getting worse for some time. At least we can still count on regular rate increases.

It seems to be yet another "time saving" and "cost cutting" element of the latest USPS "Delivering For America" plan proposed by Postmaster General Louis DeJoy (appointed by the previous US President).
Many other sellers from across the USA are reporting similar lapses in regular functions; and they all seem to have the same variable in common -- skip (or eliminate) normal procedures, in order to complete mandated schedules within a specific time period.
It appears that the type of elimination is left up to individual post office branches; and other sellers have reported similar problems, involving limitations on permitted tracking scans; skipping scheduled delivery pick-ups; refusal to scan tracking sheets; refusal to accept eBay-marked packages; and so on, including non-scanning of random shipments at local post office branches, as the OP has experienced.
My own local post office was the subject of a Congressional investigation last year, which resulted in a major shake-up at my postal branch, which has resulted in fewer significant issues; nevertheless, it still seems unusual to have so many "lapses" in normal functions, happening in so many different post office branches, scattered all over the country.
Just Google "USPS Problems" and see for yourself.

Here's another article about USPS in which you might be interested:
BEMIDJI, Minn. - When Delbert Mikelson's mail started showing up late - and sometimes not showing up at all - he blamed it on the opening of deer season.
"I thought my carrier was out hunting," Mikelson said over a breakfast of eggs and pancakes at Raphael's Bakery Cafe in downtown Bemidji.
But it wasn't the buck hunt delaying the mail in Bemidji, a tiny town 100 miles south of the Canadian border where welcome signs are written in both English and Ojibwe and statues of Paul Bunyan and Babe the Blue Ox tower in downtown. Since early November, Bemidji has been bombarded by a sudden onslaught of Amazon packages - and local postal workers say they have been ordered to deliver those packages first.
(Just another side benefit of DeJoy's "Delivering For America" program -- or perhaps that should be "Delivering For Amazon" -- 'cause we all know that Amazon just can't afford to hire more delivery drivers on their own -- and it's so much easier to have taxpayers pay for it, right?!?)

USPS has been delivering for Amazon since 2013. Dejoy did not become Postmaster General until 2020. In 2026 Trump complained about USPS delivering for Amazon. So taken all together, I don't think DeJoy has anything to do with this.

First, tax payers do not pay for it. USPS has a contract to deliver some packages for Amazon.
Internal documents say U.S. Postal Service made $1.6B profit on Amazon deliveries in FY2019

I use USPS scheduled pickups multiple times per week for outbound ebay orders. Usually, the postal carrier scans the items when he picks them up. I can often hear the "beep" on the front porch as he does it. This past Monday, he picked up 4 packages. I have a doorbell camera and the recording shows him grabbing the boxes and literally running back to his vehicle and speeding away. Typically he's not running. USPS emailed me an acknowledgement moments later saying "We have successfully completed your Package Pickup".
On Wednesday, 2 buyers contacted me asking why their tracking showed no updates. None of the 4 packages I sent out showed anything beyond "Shipping Label Created, USPS Awaiting Item". 3 of the 4 items have since been delivered and they tracking histories are comical. One shows it was in Denver, then Reno an hour later, then back in Denver. One showed no updates at all for 5 days until it was delivered.
The only way I have found to get definitive tracking showing you really shipped the package is by taking to the post office, waiting in line, getting it scanned AND asking for a receipt from the postal worker. Dropping off inside the post office is not good enough. Handing it to a clerk without getting a receipt is also not good enough. I've had the same issue when I did that. You must GET A RECEIPT from the USPS counter clerk. That is the only guarantee that the tracking shows an update at that moment proving USPS has the item.
This is a serious issue. I am not going to drive to the post office and wait in line to ship a $20 item. The only way it makes sense for me to ship items costing under $100 is to use the USPS pickup service.
I see a few options: Add a handling surcharge to low cost items to cover my cost of taking the packages to the post office. Stop selling low cost items. Only ship items one day per week and take accumulated orders to the post office to get a drop-off receipt. The last one may not be an option because ebay requires shipment within a short time frame to maintain good seller status.
USPS tracking delays and inconsistency are becoming a serious impediment to sellers.

Wait until you have a scanner that was set wrong and all your packages get marked as delivered on the first scan when you have just dropped them off (eBay sends the buyer a message indicating delivery after they have that delivered scan). That really gets the buyers flustered.

You shouldn't drop off items; rather, wait in line to have a USPS employee scan the items and then provide a physical receipt. At that moment, the scan will say "Accepted. In USPS Possession". Better to be protected since dropping off items leaves no protection. If your Post Office has a Self-Scan Kiosk, use that, print a receipt (after scanning), and finally drop the scanned items in the accompanying bin.
