We opted into Door to Door guaranteed delivery when it first became available. We set up our new shipping rate table as early as September 2017. We've been successfully using it- with a few minor problems along the way.
Fast forward to January of 2018: we made a few changes to regional rates, saved the table and went on with business. A couple of days later, we were notified by a customer that our guaranteed delivery date had passed without him receiving his item. He had ordered it Wednesday and it was guaranteed delivered by Thursday. I checked our settings: he ordered free economy and our listing says 1-10 business days. After a lengthy call to an eBay team member, I discovered the problem: the shipping rate table that once said HANDLING TIME now read SPEED (including handling time). Our one day handling time (that was set up in September) had now become a guaranteed delivery time of one day!
The issue was easily corrected by selecting NOT SET in the SPEED (formerly Handling Time) category. eBay's system will once again calculate the delivery time based on distance, order time, etc.

That's great that you got that worked out, but when ebay announced the ' Door to Door guaranteed delivery ' program, I just deleted the messages as fast as they came in. Nothing, and I mean nothing that ebay promotes ever works the way it's sold as.
