As a seller, I can see how it may be useful for packing purposes. As a buyer, I don't know why I would want or need it.

It's useful for buyers who purchase multiple similar items from different sellers, when the sellers fail to include any receipt in the package.

some are freight forwarders who need to know which package goes to which client without opening the package or lookup who bought what ?and where to forward to?

worse,any nosy person like an USPS post office worker can key that ebay number into search and find out what you are buying.

Why would you want it? It's essentially the same as writing contents and price on the package.

When I print my shipping labels on ebay, I have the option to have the item number print by checking a box. Ebay hasn't taken that option away but many probably don't use it.

There was a recent thread about how some users were seeing a new ‘streamlined’ label that didn’t have the same options as the old label program. I wonder if that’s the situation here?

Yes, that's exactly it, which is why the thread title refers to the "new" shipping label. It also lacks the option to specify a "shipping from" ZIP Code and, um one other option I can't remember right now.

Yes, the "order number" is the eBay listing number.
The old version of the label has a checkbox to show the listing number, but that check box does not appear on the new version of the label. You can look up/copy the number and enter it in the space for "add custom information". This form also lacks the option to specify which shipping date to print on the label.
The new simplified postage label form looks like this:
