 Next year i'll be away for 2 1/2 months. How do I put more on vacation for more than 60 days?

Just shut down and start over when you get back. After 30 days of not selling your considered a new seller anyway.

You can use Time Away and set it for 30 days, then cancel before the 30 days is up, then restart it for another 30 days.

Or, turn on your out of stock option and set all your listings to zero quantity.

Will all my listings be deleted when I get back?

No your listings should all still be there if you shut down. Just relist when you get back and are ready to sell.

Just end all your listings as they will still be on your unsold listing page when you return and you can either relist or sell similar.  Another bit of advice from someone who takes off over a month every year, end your listings at least a week before departure.  By the way, you can only put your store on vacation mode for 30 days.
