You would have to cancel the order as out of stock and take a defect and maybe negative feedback.

In addition to what @kensgiftshop I would possibly offer a discount on future purchases to mitigate any negative action the buyer may take.
I take it this was for the 2011 American Silver Eagle?

If you make a mistake you own the mistake.
That's what grownups do.
You have to be at least 18 to sell on eBay.
You can take the loss and ship.
Or.
You can cancel the sale as Out of Stock, and take the Defect and possible negative feedback.
Your choice as an adult.

Unless you just took over this account from someone else, it shows you have over 24 thousand feedbacks as a seller, so I'm hesitant to respond to your question. I feel you must know the answer, but might be looking for a way out that doesn't sting and we know there really isn't one.

To answer your question: Orders/Awaiting shipment (probably) -or- Awaiting payment (doubtfully) and use the drop-down menu to 'Cancel' the order, honestly citing 'Out of stock/Item no longer available'.
You will, of course, take a seller defect for it ^^^, but if you can hold OOS cancellations to only two per year, you won't suffer. I didn't run the math, but I'd worry how low your feedback will go (below your current 98.5%) should the buyer leave a red... those are worn for a year. Oh... and consider holding up on a relist, since you're out of stock.
Were it me, I'd ship it and call it lesson learned. Good luck, however you allow it to play out.

Your buyer paid the price you set. This was 100% your mistake, and trying to make yourself out to somehow be the victim is unbecoming.

How gosh. Some buyers................... Just how were they supposed to know that about the price?
You can't cancel. You could ask the buyer to. If you refuse to sell, you will receive a serious NPS strike and might also get poor feedback.
I suggest you just ship when it's paid for and take better care next time.
