How do you put your ebay items for sale on hold when you go away?

Pretty sure you just click on 'Manage Store' and then scroll down the left side to 'Time Away'.

 

It's twice the work that it used to be but that's where you'll find the vacation settings.

It would be a good idea to check-in every couple of days while you're gone. It's been reported here that putting your items on hold while you're gone won't stop eBay from processing any return requests. So if someone submits a claim on the first day you're gone and you don't see it until you get back a week later, by then eBay will have refunded them and you'll get dinged for not responding.

You can't put them on hold without a store but you can just end the listings and then relist when you return.  If you are only going to be gone a few days you can just increase your handling time with the bulk edit feature.

Yes you can- for a year now. eBay replaced store vacation settings with time away settings accessible to all users. Here's the announcement if you're interested-
