While this situation is rare it has happened on several occasions and again this week ... a previously SOLD item is Relisted by eBay and sells. Obviously there is no Cancellation choice that covers this. Just curious if others have dealt with this an how?
What I find inetersting is my account underwent some changes this week by eBay, some new page formats, new Drafts format, etc. So it would not surprise me that somehow they queued up an old listing (or more!?!) and put it up live when they clicked the "update" account for my ID.
I've messaged the Buyer explaining eBay's mistake and am waiting for a reply whereby they accept a replacement item I have offered or ask that I cancel the order ... that's being about as honest as I can be at this phase but feel I am back peddling because of an eBay glitch ... and not real happy about it.

Yes, they will always "check on it" and then tell you to reach out to your buyer....and then that's it. It always ends with "we encourage you to reach out to your buyer"
I've stopped worrying about the glitches and started to take care of them myself in post because that's all you can do.
A small but ever frustrating part of selling on ebay. Nothing that would ever occur often enough to cause real pain unless you have very sensitive hair follicles.

This has happened to me as well, under differing senarios. Happened about year ago. Has only happened with my clothing items. Only had 1, it sold. Few months later, item sold again and I had to refund buyer because it re-listed itself. When it happened few more times, after investigating, found it was also happening on items were I had variations in quantaties, colors and sizes. When the item was relisted at end of 30 day period, it picked up the quantity originally listed. I started out with 6, sold 3 - listing ended with 3 but when I relisted or sell similar, it reverted to 6. This caused me to check all listings with multiples/variations - had to inventory items, change the quantaties and changed duration to GTC to fix the problem. I did get defects for having OOS, but after talking to CSR, did get some removed.
This still happens I discovered yesterday. After having people asking questions about items, dicovered the items with GTC pictures have disappeared. I was cleaning these up, making new listings because couldn't change duration on GTC to 30 day on existing listing, and the listing reverted to original starting quantity. Good thing I was working off a report and could see what the quantaties should have been, but there were a few items I had to inventory again. I have a few items I haven't re-listed yet because I need to count them again and they're in another location.
I have also had the system freeze while creating a new listing, then get a message telling me duplicate listings are not allowed and then I have to go and cancel the duplicate. That happened yesterday also. Spending a lot of time fixing and maintaining versus new listings.

@gmcg3987 Thanks for the reply ... yes it creates a lot of situations, none of them good, for the Seller from a performance metric standpoint ...
1. Messaging a Buyer and waiting for an answer and risking a late shipment based on Handling time
2. Cancelling and being honest and getting the OOS Strike
3. Risking neg FB from an irrate Buyer
4. Having to call home office and taking a chance with a phone rep ... NOT something I plan to do

You do know it gives sellers the opportunity TO relist after the sale, right?
Granted a seller has to click the link, but it is quite possible.
You want my honest opinion? I doubt many if any at all are as you imply ... the other one I mentioned was about 3 months after the original sale ... my Sold file is set for Current Month, no way I "accidently" went back that far (actually you can only go 60 days on the old My eBay which is what was being used). The one this week I can not even find on my sold spreadsheet this year ... that's almost 10 months. So when my Sold file rolls over on any given month the older sales are never touched ...
Nice thought but I don't think it applies. This most recent one comes on the heels of eBay updating my account with new page formats (you know the space wasting ones?!?) ... Last week I was locked out of making 10 old Drafts go live, Drafts are supposed to be kept for 20 days ... then earlier this week BOOM, "We're improving your experience with the new Draft page format!" Yeh, right! I am not computer expert but I think they put accounts on different servers before they update them with changes ... like when everyone was slowly put in to Seller Hub, not everybody went in at once, they did groups. So I really am convinced its an eBay glitch ...

UPDATE: Buyer replied and said to Cancel the order ... Item deleted from Sold file and will double check Unsold file to make sure it is NOT there or deleted from that file too ...

I just went to relist some unsolds that ended this morning and there was one that ended on the 14th and I KNOW that wasn't sitting there in unsolds this morning (the last time I looked).
I believe you based on my own experience on two different accounts.

I use to have this happen more frequently and some I know were ghos relists as the item sold was done 4,5,6 months previously and was nowhere in my unsolds. In each case - I cancelled the sale using OOS and taking the ding - Ebay's fault - but my acct and I should have been checking it. I can't do a buyer agreed to cancellation - that's just me as I don't want an unfair cancellation going on their record.
The buyers - except one were great - I offered a replacement of another item - even one 50% more in cost - none took me up on it. I also offered them a discount on any future purchase.
I've had a couple of relists I didn't know about this past month - 1 was a ghost listing which was quickly removed - but 5 others were due to my own fault of using sell similar - getting distracted and coming back and forgetting to delete the items from the unsolds that I had relisted.
Check your inventory after you relist - by using the link below - so you don't end up having duplicates.
