I have a specific category where I’d like to offer free shipping on orders over $50 to encourage larger purchases.
I’ve added this through shipping preferences in the past, but it appears to apply the benefit too broadly — once a buyer has spent $50 in that category, they continue to receive free shipping on future single-item purchases, in perpetuity.
What I’m trying to set up instead is free shipping only when the current order total exceeds $50, not a standing benefit applied to all future purchases from that buyer. Any insight would be appreciated.

Since you have a store subscription, I believe your should be able to set that up as an Order Discount under the Marketing tab of the Seller Hub.

Thats where im running inot the issue - once a buyer has spent $50 in that category, they continue to receive free shipping on future single-item purchases, in perpetuity.

That shouldn’t be how that works, but it’s possible something is configured incorrectly. Can you post a screenshot of the discount settings? (It appears it would be set up using the “Shipping Discount” option, not “Order Discount” like I said before).
