I need help with the process of selling, I don’t really use eBay much but decided to sell an expensive item (jewelry) someone placed a bid but I’m checking that person has no feedback and I was wondering when the auction finishes do I ship my item right away or do I have to wait until that person payment goes through first ? Sorry for these questions but I’m really lost right now and don’t want to screw things up and send something and don’t get anything

You will get hit with canceling that auction early and not selling it. Consider it a lesson learned. I would cancel the auction. I wouldn't mail anything of that value to someone with no feedback. Plus this is not a platform for quick cash. The person can do a credit card chargeback with their banking institution. Guess who might win?

Do NOT sell a $6000 anything online anywhere.
Even if the Ebay sale goes off without a hitch and after 30 days Ebay is out of the picture, a buyer has SIX MONTHS from the time they pay to scam you out of the money paid for the ring and the ring itself.
All they have to do is go to their credit card or Paypal, tell a lie, click a couple of links and you lose the money while they still have the ring.
Take it to a jeweler for consignment. Go to a pawn shop. Run an ad in the local trading paper. Someplace where you can get CASH IN HAND.
I've been here 20 years and would never, EVER sell anything for more than a few hundred dollars online anywhere.

End the listing immediately. No one legitimate buyer is going to pay a first-time seller over $7,000 (with sales tax) for a ring said to be Cartier but with no provenance, no papework, not much description except "56mm," instead of the usual U.S. sizing (7.5), fuzzy photographs, and so on.
You're in New York City, so take it Cartier's or to any one of hundreds of fine jewellers in that city for evaulation appraisal, and sale. That is the only safe and sensible thing to do.

I am surprised with ebay's constraints on new are infrequent sellers that you were even able to list the item. You have gotten some excellent advice from a lot of experienced sellers. It's a shame you did not come here and ask the question before you actually posted the item.
As others advised you can cancel the sale now or let the auction finish. There is a possibility that the buyer will not pay and if they do not pay after 4 days you can cancel the order for non-payment and you will not have to pay the fees. If they do pay you can cancel for the item being out of stock which will cost you the fees and earn you a ding on your account.

Basically all of my transactions are usually problem free her with an occasional glitch. We do not sell cheap items. Most or over 100 bucks up to 700 bucks. BUT, we have been here for over 15 years. We have a good rep, many feedbacks, offer free shipping and free returns, 30 day returns, all this to prevent people getting miffed because they want to return something, they do not want to pay if they return, and we give them ample time to return items. So we work hard not to upset buyers here if they do a return. 99.9 percent of problem transactions happen when a seller is being difficult with a buyer when they request a return. Only 1 time many many years ago did I get a buyer who returned nothing, and I was covered by ebay with that one. Payment disputes for INR and chargebacks have also been covered with seller protection. But even with this history, NEVER would I sell an item at the 6 grand mark here. You have to factor in the most you would be able to loose , based on your sales figures IF you get that one or two scam artists. People selling 6 grand items here have a rep, and they sell enough 6 grand items to cover their losses, maybe.

This is a seller with little to no experience selling on eBay who is listing some high dollar items.
He needs to accept the advice of the many experienced sellers here.
