Ebay charges fees on shipping and state taxes, tax money I never see or have anything to do with. Ebay is pricing itself out of business.

Agreed. In fact, not just the American way, but also the only way any sales business would remain profitable.
Fees on fees on fees is unfortunate, but by no means is eBay deviating from standard industry practice in payment processing.
In addition, eBay now must do work they previously didn't have to as a marketplace facilitator and compute and withhold the taxes, something that can be very complicated and vary based on street address, even within zip codes, in certain localities. Tracking the sales tax changes, rates, what goods are taxable where, etc., is a service I'm glad eBay takes care of.

You don’t have to buy your shipping from eBay. I don’t because EBay doesn’t allow the postage fees to be charged to a credit card. I pay the same rates for USPS with Pirateship and get to charge the cost to my American Express Platinum card that gets me 4 points for every dollar in shipping fees I charge to the card.
Because of the card I don’t remember the last time I paid for a plane ticket and I travel about a half dozen times a year or more.

Since sales tax is part of the transaction. I'm not sure why the processor would want to exclude it.

I did not say it could not be changed, I said it would not be changed, and for reasons that should be obvious -- including the bottom line of the processor. So you please stop putting words in my mouth.

Just to add to your thought. When the market price and for an item drops to a point you can no longer make a decent profit stop selling it and find something else to replace.
When I was selling pre-owned 7 for all mankind jeans - sell for ~$50/pair + shipping - priority mail (weight ~1.5 lbs.) All authentic. I could not get enough of them. Then more sellers appeared and the fake sellers showed up sell price tumbled and acquisition cost went up. My ]profit margins died the death of a rag doll and sales turnover slowed - stopped selling them and discovered used 35mm film cameras of certain name brands could be sold for a decent profit and bought at a reasonable cost plus some old box type cameras that collectors sought - do know a bit about cameras.
Remember the Hula-Hoop craze of the mid 50s only lasted 3 years and there was only one supplier - Wham-oo - the cheapo lower quality & price sellers showed up and they weren't from China.

eBay has been charging fees on shipping for a decade and are not out of business yet.

If you sell a $200 item and the state sales tax is 6% then the FVF on the sales tax is
(($200 * .06) * .129) = $1.54
Would you prefer to collect the sales tax on every single item you sell for up to 45 states, keep track of all the totals and remit the sales tax collected to every single state on whatever periodic basis they require? Not to mention all the paperwork that goes with that and the additional work required when you go to file you 2022 federal and state income tax? Personally I consider the eBay collection and handling of the sales tax to be a bargain. Few businesses perform services for free.

And I would like to add that I hope all the people who come here to complain that a fee on sales tax is (take your pick) illegal, immoral, unethical, unreasonable, wrong, corrupt, offensive, and/or some combination thereof, have stopped using their own credit cards when they buy, so that their own consciences are clear that they are not adding to a practice that they see as despicable.
They must find it especially detestable since most of the merchants they deal with are not only paying the merchant fee on the sales tax on each transaction paid for with a credit or debit card, but those merchants are also responsible for collecting and remitting that tax to their states in the first place.
I want to hear the sound of scissors cutting through all those cards held by people who vow never to use them again to spare sellers from this outrage. I want to hear the clack of the keyboards as they close every on-line account on which they purchase, so as to spare those sellers from thos outrage, too.
