Not Using Ebay's Shipping

If I am not using Ebay's shipping and just go to the post office and ship that way will the delivery confirmation still work for Ebay? TIA

Yes, of course it will work. Just keep in mind, if you purchase postage online, you get a discount. The counter rates at the PO are higher.

Yes, @creativegifts4you.  You don't have to use eBay Labels, but you *do* have to manually enter the tracking # into the transaction record in order to be covered.  If you don't,  eBay/PayPal has no way of seeing that the item was sent/delivered.  Plus soon, if your buyer opens a case, if your Tracking info isn't in the transaction promptly, you will automatically lose the case.

But more importantly, why not use eBay Labels?   You get a discount over what you're paying at the counter.  You could be spending less if you did.
