Does Ebay let us know its going to a HUB to be shipped off overseas. Or will it say in the ORDERS area?

Yes, the address will be an eBay hub (it says eIS C/O [customer name], to be exact), and it won't even show you the buyer's actual full address anywhere. Just always print the shipping label with the address exactly as written on the order. It's easiest if you're using eBay labels or a shipping platform that integrates with eBay so you never have to worry about the address not being correct, unless the buyer puts it in wrong.

Agree with brightlightbookseller. But if you want to know where the package is actually going, go to the orders page and there's a spot where you can click on the actual address (although there is also an additional warning NOT to send it to that address.)

you can also tell by looking for an extra international fee in your payments

It depends. If you are using the EIS program then yes you will kind of know it is going off to a hub and it should show in the listing. For example if you were to sell your following item to a buyer in Bermuda.
Other than that it is difficult to tell sometimes. The item could be going through a freight forwarder which will have a US address but will get forwarded to an international buyer by the freight forwarder. It could also be going to family and friends in the US either for them to forward or as a gift/present.
You can often see the buyers registered country/address but that does not mean the item will get shipped to that address. oaklandmaryland mentioned the international fee however that is not charged for items going through EIS and it applies in one of the following 2 scenario's.
If you're not using eBay International Shipping to ship your item, we charge an international fee if either:
This fee is calculated as 1.65% of the total amount of the sale and is automatically deducted from your sales.

How do I know if I am in the EIS program.. I got some message saying something about enrollment but I never did anything.

Orders sent via EIS are not subject to the International Fee

You are, this is what your listings show to a Canadian buyer

Actually, EIS order DO show you where it's going- if you look BEFORE you print the label, and it even says 'Don't Ship it Here!'

If it's shipping to Glendale Illinois (most do) then you'll know.

For clarity, eBay International Shipping is a Seller Protection program.
The seller is only responsible for delivery to the plant in ILLINOIS, after which eIS takes responsiblity for delivery.
If the buyer makes a Not As Described claim, the seller still has to provide return shipping, BUT only from the eIS plant in the USA.
Which is the address the seller addressed the shipment to.
It is up to the overseas buyer to get the disputed item back to the eIS plant and persuade them to use the label to get it back to the seller before the NAD deadline runs out.
Again, eBay International Shipping is a Seller Protection program.
This is also true if the seller uses a private freight forwarder, like the dozens in Doral FL and Delaware. Delivery is to the forwarder. And the RSL is from the forwarder.
An overseas customer gives up most of their Money Back Guarantee protections when they use their own forwarder or when they buy from a seller using eIS.

To the best of my knowledge, and according to the EIS policy/program this is not accurate. If a buyer files any type of eBay claim or a chargeback the seller keeps their payout and EIS deals with resolving the issue with the buyer. There is no way for a seller to get an item back that has shipped through the EIS program.

I had this discussion with tyler@ebay a couple of years ago about the GSP. I believe it still holds true about the eIS
Now -- if the GSP is not involved, but the buyer uses a freight forwarder, does the seller provide Return Shipping from the forwarding address or from the buyer's address?
Oooh this is a good clarification question @femmefan1946! A seller is only required to provide return shipping from the buyer's input address at time of checkout - that goes for any return where a seller provides shipping ('free' returns, etc).

BUT
GSP isn't considered a 'freight forwarder' as much as a shipping service a Seller can avail themselves of.
On a GSP transaction the address input by the Buyer at checkout is their address at the final destination. The Erlanger address is inserted into the transaction for the Seller. This means for Not as Described return requests a Seller would still be responsible for return shipping from the final delivery address*.

It does not hold for the EIS program. A seller will never get back an item that is sold and shipped through the EIS program. The EIS program keeps the returned item and disposes of it.
As well as making your items available to buyers in almost 200 countries, there are several other benefits to using eBay International Shipping:
