Hi everyone.
We have dozens of listings, most of which were incorrectly set up as having just 1 variation which we don't need. When trying to delete this variation on a listing, however, I'm unable to save the changes. Is there a way to edit a listing to delete its one variation and show no variations?

You cannot change a variation listing into a non-variation listing.
You cannot change a non-variation listing into a variation listing.
Either leave it the way it is because the variation is harmless, or create brand new non-variation listings and copy/paste your descriptions and titles. (Sell similar will not work, you need to start from scratch.)

I don't think so....you just have to "0" that unavailable variation out so only your available one can be purchased....
you can do that from the seller hub view......
open the listing....click the line UNDER the item title

You can't.
You have to set the items you no longer have to "0" quantity.
That or re-list the one item you have remaining.

It's sort of like the same reason why you can revise an auction and turn it into a fixed price listing, or vice versa. These settings are determined at the initial listing creation and are irreversible.
