The item in question is an Organic Beetroot Head, listed under "Collectible Figures Pieces & Parts".
What's the big deal? Well, it's a one-of-a-kind and, that alone, makes it special and unique.
The questions are:
How do you put a price on something like this?
And in which Category would you list it?

It is special & unique, But without having anything to go on, It is nearly impossible to price it, Your price may be well over or under it;s actual worth without getting more information, where is it from, how old is it, was it carved that way??, I would try to get a professional to look at it, Like an antique dealer perhaps, or even someone from a museum, to give you a better perspective on what you have., It would fall into the category of collectible, but which exact genre is a mystery, Good Luck!

Beetroot? Like the vegetable?
Many countries have strict import laws. Unprocessed vegetables wouldn't get past customs.
What if it gets frozen in flight, then thaws in the warm mail processing building?
But, that doesn't matter because, it's not a real vegetable, correct?

It may be a unique, one of a kind item, but how long is it going to last before it rots?
If a buyer spends that much, I think they would want it to last more then a month or two.

The banana is a work of art attributable to an artist whose work commands hefty prices.
Someone bought it because of the artist who applied the tape.
The beetroot is worth what a willing buyer and a willing seller will agree on.
IMO it is not worth $1,000 or more. At least not on Ebay.
There are many items I list where the price I choose to list at is based on what I think one buyer might be willing to pay. I do not list anything I do not know the approximate value of on Ebay. Ebay buyers usually disappoint, so one must force the item to start close to its value and a reserve may be necessary.

Apparently it was replaced regularly before the rot set in.

Some in the Art industry also use this as a way to "Launder" money. You see it all of the time with these so called "Artists" that sell work for millions. Some are more creative than others.
I do enjoy Banksy's work, especially the one that sold that was immediately shredded after bidding stopped.
