I have an item with 100 units but don't want to sell more than 1 unit for the same buyer (or at the same purchase).

List using the out of stock (OOS) seller preference option.
That option is for "fixed price" listings.Does not work with "auction" listings.
List as one. When that sells, ship, and then block that ID.
Then change the quantity to one. Sell, ship, block, repeat.
OOS allows the listing to remain for an entire month, but not searchable when the quantity is zero (OOS)
or just list them one at a time, and block the ID after purchase, then list another if you have lots of listings to burn.

In your site preferences, you can set up a limit of 1 item per member per 10 days. If that's not good enough, you could also put each purchaser on your blocked-bidders list.

or just list them one at a time, and block the ID after purchase, then list another if you have lots of listings to burn to sell just one per transaction

Thank you so much for the answers, all the "solutions" are just "workarounds" because ebay don't have this feature.
Some cheap items I can allow purchase up to 5, but other items, just 1 (or maximum 2) per buyer, at least for 30 days (after the "refund" period).
ebay is a swamp full of rogue buyers trying to get free stuff just by opening false claim requests.
How can I restrict selling just 1 item per buyer?

One caution. You may not make happy buyers that way. They might not ever buy from you again.

May I ask why you would want to limit buyers who may want to spend their money on your items? Why do you care if they buy more than one? Is their money not as green as the next buyer's money?

That's what I was wondering. How is a buyer buying a single item a good buyer but one who wants or needs more than that a rogue? Personally I'm always very happy to sell multiples. I offer a 10% discount on extras because I save a ton on the combined shipping. You don't want to make money?

I think you didn't understand, I already explained that and I didn't say that the buyer cannot buy other items, I just want to avoid him buying the same item more than once a month.
I want to restrict my losses. You only have profit After 1+ month (return period). I prefer many buyers to buy 1 piece than a few buyers buying a lot of (repetitive) pieces because most of the time they are thieves that will ask for a refund.
e.g.: suppose you sell iPhones, what's normal? 1-buyer buying 1-phone, or 1-buyer buying 10-phones? I'm sure that it's not a reseller (because of the low margin), I'm sure that is a scammer that will open all types of refund requests, and eBay Protect and Love the Thieves.

If you think all buyers are scammers why even sell here? No buyer is going to buy one and then come back and see they have been blocked and later come back to buy another. Like a said playing game usually does not work out well here.

Thank you so much for the answers, all the "solutions" are just "workarounds" because ebay don't have this feature. It is probably not a feature eBay is likely to put in place. Like most businesses, including yours, the goal is to move merchandise to maximize profits not attempt to constrain it. Constraining the supply to increase profits only works if you have a monopoly and are in total control of the supply.
Some cheap items I can allow purchase up to 5, but other items, just 1 (or maximum 2) per buyer, at least for 30 days (after the "refund" period). You have nothing listed under this ID which is not unusual lots of sellers have posting ID's but it's hard to tell what you are trying to sell and what your determination is of "cheap". As a side note you do realize that buyers can always open a chargeback through their CC company and some of the timelines for being able to do so can extend out to 180 days depending on the CC company or the bank. Don't let paranoia adversely impact your business.

Do you really believe that is common for a buyer to buy a new phone every month?! What are the probabilities?!
Maybe 0.001% of people buy a New phone every month, and 99.999% of the people will buy a new phone more than 1 month later (maybe several months).
This is so easy to understand, I really don't know why you insist on this argument. LOL
ps.: I NEVER said block forever, I said, forbid to buy for 1-month (after the return period)

Are you making this "rule" because someone scammed you by buying multiple items? Or are you just assuming that most buyers are dishonest and want to rip you off?
Most buyers are honest and in over 5000 transactions, I've had 2 scammers. (And both buyers only purchased 1 item from me.)

As has been explained, 30 days is only the dispute timeframe for ebay. Paypal allows 180 days as do most credit card companies.
