Is there a way to customize the invoices I send on completed purchases? I'd like to switch my message at the bottom and change the address shown to my PO box.

Not sure of your intent but you do know eBay sends the buyer an invoice correct? If you want to change your address information to a PO box you can make the adjustment in your addresses account settings.

Unless you're combining multiple purchases and/or adjusting the shipping, or changing the shipping method at the buyer's request, may I respectfully ask why you are sending invoices?

A change to the sellers invoice will reflect on that invoice regardless if the seller sends it or if eBay sends it. It used to be possible to personalize messages on the invoice, I’m not sure if that is still possible.

You can still add a message when you send an invoice. Of course as others have pointed out there is no need to invoice unless you are adjusting the shipping.

I am assuming she want to add a custom message on the invoice, That`s what I am also looking to see if I can do that.

"Send on completed purchases" ?
Do you send a copy of the invoice / packing slip with the order? Is that what you want to change?
If so, you can do that through manage orders awaiting shipment - click the down arrow - select print packing slip - next page you can click "customize" to change your info. You can change your address, add a note to your buyer, add your eBay store URL, etc.
I include a packing slip / invoice with every order so the buyer can readily see the purchase info and incase the shipping label damaged by USPS the rightful owner can be found and the item delivered.
My packing slips mimic invoices in that they show my eBay store URL at the top, both the buyer and my addresses, the title, item number and price of the item they purchased, total cost including shipping (I offer free shipping) and the sales tax collected by eBay.
Below that info on the left is my note to the buyer.
Below that is the requisite eBay statement about eBay collecting the sales tax.
