...by that I mean can I sell an item configured in two different ways, at two different prices; the buyer chooses which way he wants it and pays that price?

Yes. You can make them separate listings or make one "variation" listing.

I have 8 plates to sell. I have them listed as a four, a two and a single listing with gradually lower prices. If the twosome sells, I'll probably edit the listing for the single to make it another double. But in all cases I am not in danger of selling more than I have.

Thanks all. Good to know. Now all I need to do is figure out how to to it. I haven't really investigated the ebay listing app since I made the decision to sell it this way. Is it pretty obvious how to do it?

The above posts were referring to the variations format, which isn't available in every category:

But depending on what the item is, it might be better to set up two different listings. Just make sure that the difference is mentioned prominently in the listing title. You don't want the potential buyers to be confused, and you especially dno't want to confuse the bots that might accuse you of setting up duplicate listings.

Hmm... My item isn't in the ebay categories catalog listing for variations. So I guess that's out.
And if I set up two seperate listings, I might get a buyer for both. Then what do I do? I only have one of the items to sell.

If you have only one item, then the variations format would not be appropriate anyway, nor would two separate listings. If you have one item, then you list one item.

That is the problem.
You could get two buyers for one item.
You could get one buyer wanting two items.
I'd suggest listing it with the addon and let the buyer decide to do with unwanted parts.
