Since I would actually be meeting with the buyer and they would be able to inspect the items before paying, can they then open a SNAD? Doesn't seem right, but it IS eBay. I have some old bubble gum cards from the 70s and don't want to list them, ship them out and get a rock back in return

As far as eBay is concerned the SNAD rules are the same
whether you Ship your item or do a local Local Pickup.
Buying with local pickup
Offering local pickup
Just keep in mind that if the buyer pays you in cash as far as eBay is
concerned the buyer is still covered by the eBay money back grantee
if they open a SNAD case later.

In THEORY MBG doesn't apply on local pickup items, as long as they pay in cash at the time of pick-up (so no SNAD)
While PayPal doesn't cover local pickup, if the buyer pays for the item using paypal, it brings them back into eBay's MBG.
But as you stated this is eBay.

The buyer can still file a SNAD. You can't discourage PayPal payments, but you can encourage cash payments. If the buyer pays cash you won't have to worry about returns and rocks.

Purchases are covered by the eBay Money Back Guarantee when all of the following are true:
Buyer pays in CASH then they are NOT covered...
Again though it IS eBay, and they are known to side with the buyer no matter what.

Some items have defects which cannot be detected by a visual inspection.
Such as, the thing turns out to have been stolen, and the police come and take it away from buyer.

On all local pick up items, I do not offer returns.
And I have a simple receipt they sign stating the item is in good condition, they accept it as-is and that all sales are final.
I also take a picture of their ID if the item is more than $100.

That's good if you can make it stick, but I doubt that "receipt" would hold much water if the buyer decides they want to return it after they get it home and discover something (or make something up about it) that they didn't notice when they picked it up. I mean, this is eBay we're talking, not a B&M store or Craigs List. Besides, isn't it the buyer who's supposed to be the one asking for a receipt?

ID would allow me to track down someone if they pick up a high-value item.

I've been on ebay as long as you, and I haven't had such a claim either.
But I never requested buyer to sign anything or show me credentials.
For what it's worth, ebay MBG didn't exist in any form until somewhere 12-15 years ago, and the LP coverage was considerably more recent than that, no doubt prompted by bad buyer experiences.

Same as the previous two posts, I've done quite a few local pickups in the past 21 years and never had any kind of issue certainly not a SNAD.
Why would anyone want to return an item they bought and picked up in person unless the item was not testable at the door step and the seller was less than honest about the condition.
