I am not seeing the gallons of packing peanuts and yards of bubble wrap required to ensure this arrived undamaged. Nor a claim by you that you packed this brittle or fragile 3 dimensional object properly.
You should skip ahead in the Grief Cycle to the ending step of Acceptance and refund. That will save you the return postage. If the buyer has not filed a return case yet, that will prevent a ding from being added to your seller metrics.
A buyer can file an irod clad return case for these reasons with or without an ai generated photo.
1: Doesn't work or defective
2: Doesn't match description or photos
3: Wrong item sent
4: Missing parts or pieces
5: Arrived damaged
6: Doesn't seem authentic

I've found out that ebay is the best place to go to find out if something is AI or not.

Aww, that's a very sweet piece. I bet the buyer is very disappointed.
Looks broken to me, not AI. Have your customer return it or just give them a full refund. Sorry. It's on you that it wasn't packaged better.

Its not wrong, but I find asking AI if something is AI or not to be weirdly recursive.
Reminds me of the paradox that computers and robots aren't even self-aware enough to realize that they themselves are artificial. Speaking of which, I need to finish watching the Westworld series.

Why would people assume it wasn’t packaged properly? Came to sight for genuine concern, have been selling on eBay for over 20 years, and just had a camera returned with the lens swapped out. I have never really complained, questioned, etc., just refund, however, it’s getting a little ridiculous. And judging by some of the responses I totally get it.

I think the assumption is probably based on the current condition of the item. I didn't comment on your packing, but based on the numerous points of breakage, it doesn't seem unreasonable that others might question it.
If you aren't packing the item in the original styrofoam molded packaging that it came in from China, it needed several layers of small bubble between the delicate parts, large bubble to enclose that, and lots of heavy craft paper to fill the void in a box. I would have probably double boxed that one myself in addition to the other steps.
All that aside, you haven't given us a reason why you think your customer would have gone to the lengths they would have had to to create an AI picture (again, with all that crap in the background) to ask for a return/refund. What do you think their goal was when they could've just told ebay the item arrived broken and been done with it?
This is one of those "when you hear hoofbeats..." situations

You cant take it so personally, by the amount of damage to the piece, it looks like it wasnt double boxed or even wrapped sufficiently.
