When you make the sale, the buyer will be given a 6-digit code that you should enter on the Order.

If listed as Local Pickup and the buyer selects that option, the buyer will be given a 6-digit QR code to bring to the seller. The seller's possession of that code is proof of delivery, but the only way it can be logged to the seller's account is through the eBay Mobile App.
If not listed as Local Pickup Only, you may see the option to select "shipped", but you won't have a tracking number to supply.
The next best proof of delivery is to print out a copy of the sale and have the buyer sign it as proof the item will picked up. The buyer could request the same as proof of payment if paying in cash. For pricey items, it would be good to get a driver license.
If none of that has occurred, a later option is to have a pickup conversation in messages. Send a message to the buyer to thank them for picking up the item, and hopefully, the buyer will message back confirmation of the same.
And lastly, an item could be deemed delivered if the buyer provides positive feedback.
