I purchased a new item from an eBay Motors seller that was advertised as fitting my specific application (ie, the exact Year/Make/Model of my motorcycle).
After attempting to install the item, I discovered it does not fit my bike. I started a refund through eBay, marked "did not fit", which at the time, I felt was the closest representation to my situation. However, unbeknownst to me, eBay treats that as a "buyer remorse" return, not an "item not as described" return. I tried updating my return reason, but that just closed my return completely.
After multiple chat sessions, eBay won't help me, and the seller tells me I can mail the item back to them, but only if it's unopened (which it's not - I opened it to attempt the install).
eBay even suggested I turn around and sell the item on eBay - what a hassle.
I feel frustrated and let down by eBay's Money Back Guarantee, as well as the seller not being helpful.
What are my options?

Well, You could sell it on eBay but that would probably take time especially since its for a specific bike.
I would suggest you contact eBay again and tell them that the listing was not as described and you selected that it did not fit by accident.

Add in the fact it does not fit my specific bike, and it's a very limited application, there's a decent change the buyer will want to return the item to me..
I did inform eBay of that, and they told me that since the return was closed, there was nothing they can do - return cannot be reopened.

That is very unfortunate.
How much did it cost? If you dont mind me asking.
Maybe you could ask the seller for a partial refund?

Tell eBay it's not as described because the part they sent doesn't fit, they sent the wrong item!
"Wrong fit" should be able to choose ordered wrong size or ordered right part but they sent the wrong size,,,,,,eBay should realize you can have a buyer's remorse return because you ordered the wrong item but it's not buyer's remorse if they sent the wrong part.
If eBay isn't helpful if you paid with PayPal file a dispute there. Enable free returns before you file.

A little over $100.
Seller has stopped responding. Will try calling them tomorrow (seem to be a business) as I do want to get the resolved before leaving feedback

I think I got switched over from using paypal to using ebay for payments unfortunately.
Is there a way to switch back to paypal?
What happens if I send the item back at my own expense anyway? The seller has explicitly told me they wouldn't accept it since I opened it to attempt the install.

Is the bike stock? is it a classic? did someone before you change anything?

Try this:
Go to your purchase history and click return item and select, the item doesn't match the description as the reason.
The seller will have 3 days to accept the return and pay return shipping or refund without returning.
If they don't, return to the case on day 4 and ask Ebay to step in.

This ^^ Even though you already opened a return request and you said that in your opening post, go ahead and open another return request. On eBay, you can apparently keep opening return requests until it works.

bike is stock.
Unfortunately, when I go to the purchase history, I'm not seeing the option to open a new return request.
I see "Status: Your return is complete
Return on this item is closed. View return details"
I think it's because when I went back and tried to change my return request, it closed the request, which eBay support was saying is an immutable action.

If you paid with PayPal, regardless who got your payment:
Step 1: First, activate Return Shipping on Us here which repays you up to $30 twelve times a year.
Step 2: Totally stop talking to the seller, and file a Not As Described dispute here (which you had tried to do at eBay).
Step 3: When you're told to return the not-as-described item, keep the receipt when you send the item back, and upload the tracking number to get your refund. Opened is fine, as that's how you found out it's not as described.
Step 4: Submit you receipt here to get your return shipping refund from Bulgaria, yes Bulgaria.

If it won't let you open another case, go to Pay Pal or your credit card and open an Item Not As Described case.
