Buyer purchased an airbnb digital gift card worth $50 for $48. The buyer redeemed it shortly after sale and now is trying to return it stating he thought it was $100 gift card for $48... I checked and the funds have been used. Now I receive notice I'm receiving something in the mail today from him in the form of a return but it was a digital gift card there is nothing to return and I don't know how to go about handling this I don't know what this person is sending me!

Your ad states it's a $100 gift card so if the buyer only received a $50 gift card then it's not as described. This is why digital and even regular gift cards are strongly discouraged from being sold on an online platform.

Sorry, but your listing says it's a $100 gift card.
If the buyer filed an INAD, you'll have to refund when whatever it is they are returning is returned.

Your buyer is within rights to get a refund. Your Listing is misleading see screenshot.

Your listings are kind of all over the place @spookypuffs .
One sold for $185 - picture shows $50 GC while item specifics say $200 GC.
One sold for $48 - item title and description both say $100 GV while item specifics says $50 GC.
Your listings are "not as described" and buyers are covered by the eBay Money Back Guarantee - which means buyer returns the item and refund comes from your account. Unfortunately you made a lot of errors on your listings from the specifics to the shipping (local pickup is not allowed for digitally delivered goods) to the type of item you sold (digital gift cards are not allowed to be sold by sellers without pre-approval.
You broke a few policies and you don't qualify for any seller protections. The buyer will be allowed to get away with having used that e-gift card and returning an empty package if they want.
I suggest you read this policy in full before attempting to sell anything else:

We all started somewhere @spookypuffs . Stay away from digitally delivered items. Start with inexpensive items from around your home that you want to get rid of until you learn the ropes and come here any time with questions. I posted some good links for new sellers below. If it's an expensive item, I suggest using "local pickup only" and not offering a shipping method. Until you build up a selling history it's best to sell low priced items.

It doesn't matter what you clarified with the buyer, it's what the listing says that matters and the listing said a $100 gift card.

@spookypuffs Why are you saying the buyer thought the gift card was worth $100 when that's exactly what it was worth in your listing? At any rate... did your buyer start an official return? If they did that's good for them because you listed the item in a way possible for them to get a full refund through eBay. It seems like perhaps they did since they knew to ship something to you with tracking.

Without tracking confirming delivery, you have no protection.

Your buyer should open an INR case and they will get all their money back.
Hope both of the buyers on these digital cards open cases on you and get 100% of their money back.
