I want out of ALL saved search emails. They are from old searches that are no longer in my saved searches in my account anymore so I can't disable them that way and when I try to use the link in the email I get this (screenshot attached). Please let me know how to opt out.

I have the same problem.
It's probably a database problem that's the cause. eBay has a loosely coupled database system (I used to work in the database access layer team at eBay). Occasionally a mapping table might not be updated and unless there's a reconciliation job to fix it, the problem will remain.
If the support team has a tool that addresses saved search problem which includes removing ones that are supposed to have been removed, then we're in luck, otherwise we will most likely just have to live with the problem. Support does not have direct access to the databases.

I've had this problem for two weeks and reported it 10 days ago. So far nothing has changed. If I have to do so, I will block ebay emails in order to stop my email account from being inundated with the results of long dead searches that have mysteriously been ressurected. I'm angry about this and am not going to allow myself to be subject to receiving phantom search results every day indefinitely. I've been an ebay member for close to twenty years, but if this is what I have to do to protect myself, I will.
