This setting is currently not working properly. All of my listings, including single quantity items are appearing in my active items after being sold.

The setting is working as it's designed. All listings are supposed to stay active, including single quantity listings, when sold out and the seller has the out of stock setting enabled. You either end listings manually, or you let them ride and they'll use up one of your free insertions until they stop renewing after 6 full mos of being out of stock. If that doesn't work for your needs you can disable the out of stock setting for all listings.
