Any difference if you try another browser?
If I have problems adding an item to my Watch List, I generally hold down the shift key and refresh the page and try again until I see some indication that it has worked; since eBay removed the blue band at the top of the listing that previously held messages like "saved on your Watch List", now I have to check the little heart icon by the item picture to tell if an item is being watched.
