Could anyone give me a step by step process on how to cancel renewals on products becasue i cannot seem to find anyone who knows how to do it and ebay is not helpful at all with this.

If you're asking about ending fixed price listings, it depends on your settings.
If you're using the out of stock setting then you have to end listings manually or leave them alone and they'll expire after 6 mos. If you're not using the out of stock setting then listings will stay active until you either sell out or end them manually.
