What a mess...
From my experience everybody was happy with the existing payment method.
Why mess things up?

It really doesn't matter if you or I are happy with it. The choices are:
1. Sign up for MP
2. Stop selling on eBay
Personally I have been on MP for 18 months and I like it way better than Paypal

You won't be blocked from buying. It only affects the ability to sell on eBay.
For those people who reject the new payment process, they won't be a seller.
How important is it to you to sell on this platform? If it's not a big deal, then do nothing.
I'm in MP, but I didn't do it until I had to. I never had a problem with Paypal, but that's not an option anymore.
It's your choice.

What exactly do you like "way better" about MP compared to PayPal?

What if I only sell on ebay.es or ebay.fr?
Do I still need to opt in fo MP?
ebay.co.uk is already a no go zone for me, either as a seller or a buyer.
Thank you.

That is a good question.
Other then I don't want to give away my bank account details.
And now that I don't sell to the UK, due to the taxes, I guess I'll remain a buyer only.
In all my years as ebay member, I've never sold outside the UK. It was such a huge market.
What a pity...

You'll continue to sell and list. You probably can't make new listings, but the ones you have will auto-relist continually; But you won't get paid. That money will sit there for infinity and beyond until you sign up for managed payments. You won't be able to close your account, because they owe you money and they won't pay you because, well, because you won't sign up with managed payments.
You share that information with every financial institute, every employer, every job application, every time your resume goes online and every credit card.
Heck, your dentist, chiropractor, hospital and doctor have copies of your drivers license and social security number.
Oh can't forget about your life insurance, medical insurance and car insurance, they have that information too.
And one more really matters? It's the world we live in. I'm sure there are still some empty caves available if you need to shun society.

Yes, eventfully you will not be able to sell any more, as of late some sellers cannot collect their money, it just sits in limbo.
It's not a mess, for me there was no pause in the action. I switched over in October of 2020, it's easy and a little better now that we do not get monthly invoices.
Why mess things up?
Things change, adapt and roll.

As a buyer: No more ability for scam sellers to operate - no more open an account - sell nothing - get money - open another account
As a seller: No more having to adhere to the ceiling of $$ that can be transferred to my business account in one hit from Paypal - direct into my account cuts out the middle man

You can still sign in to managed payments, you will just be receiving your funds from Payoneer instead of Adyen
