Hello, We are a company that sell items that have a cost range from $450. to $1k+. The items are made in the U.S. and ship same day from our online outlet. We are about to try ebay but have been reading some posts and watching the news that has us really worried.
How safe is ebays payment system? Is it secure and encrypted? Is it FDIC insured in all States?

The point is that most financial transfer/holding institutions are REGULATED.
How eBay deals with sellers' funds IS NOT.
When the eBay proxies hear think they are clinching and argument by saying "It's eBay's site; they can do whatever they want," they are actually making the case against eBay. Who wants to put their livelihood into the hands of someone who can "do whatever they want" to you? It's actually an argument against selling on eBay.
The steadily mounting abuses that eBay perpetuates on its sellers, and the constant flaunting of "we can do whatever we want," surely means that regulation will one day happen, and it can't happen soon enough.

There's a word for what the OP did but satire is NOT it..
There is no need for eBay or Adyen to be FDIC insured- they do NOT hold deposits for long periods. They are NOT going to fail & go bankrupt with a bunch of other peoples money.

Adyen, the processor eBay chose is as secure as Paypal I'm sure.
They wouldn't have select that company to process payments if they weren't secure.
Many people here use a posting ID to post on the boards rather than their selling ID but why is that even relevant?
You're making this seem sketchy & unsafe, it's not. It's no less safe than Paypal. Again the biggest issue is cc chargebacks and/or scamming buyers.
Selling limits are put on new sellers for good reason, to protect BOTH buyer and seller. You get a chance to learn and prove yourself worthy of higher limits, without risking high value items until you have some experience.
All the sellers here or at least MOST went through the fire too.
Since PayPal is a money transfer agent and not a bank, they were not FDIC insured either.
