My active listings were removed after Ebay asked me to update banking information despite saying in the listing that I wanted payment through PayPal? I didn’t enter the banking information because I prefer PayPal and they took down my listings which had multiple bids and watchers on them?

If Ebay invited to you sign up for Managed Payments and you didn't, they will remove your listings.
Why sell, if you can't be paid.

You don't have a choice of paypal or Managed payments...........as Ken said.

Your buyers can still PAY with PayPal, but sellers can no longer receive the proceeds through PayPal.
If you prefer not to sign up for Managed Payments, you will no longer be allowed to sell on eBay.

It is important to read the emails completely that you receive from Ebay. They would have emailed you asking you to register for MP. That would have been when they asked you for your banking information and your SSN.
Because you didn't comply, as others have stated, Ebay took down your listings because by not registering for MP you were telling Ebay that you no longer wanted to sell on the site.
Most of us were just fine with PP but that really doesn't matter. Ebay has decided they want their own money processing system like all the other sites that are similar to Ebay. Ebay is pretty much the last one to do this. Now smaller sites still allow you to use PP as a seller, but you may not get the visibility or sales that you get on this site.
What you need to do is register for MP. Then you will be able to repost your listings.
