I think as a seller my choice in how I receive my payments is my business. If a customer pays me right away ebay has no reason to be holding my money and making me wait 5-7 days to get paid as well as telling me I have to ship before I even get paid. Not only that they screw you in the end by charging you 2.55% plus a percentage of shipping. Has anybody tried Mercari? Does anybody know if there is other options in how I am allowed to get paid so Ebay can stop controlling every aspect of my sales for their profit.

Unfortunately, no....there is not the option to go back to Paypal as your payment processor.
As for Mercari, they use the same Payment processor as e-Bay:

ANY online or brick & mortar business has the right to set up whatever payment system they so choose.If potential customers are not happy with those payment methods, it is their choice to shop there or not.
IF YOU were to set up your own website, YOU would have that same choice and potential buyers would have to abide by your payment method/system or go elsewhere....
...and so it is with eBay= eBay has the right to set up whatever payment system they so choose.
If you as a buyer OR seller do not like that system/method, it is your choice to sell/buy OR go elsewhere.
eBay has chosen its MP system(Adyen) and you have no say in the matter.
Accept,Adapt,Adjust and carry on OR go elsewhere...

It would only be your choice if you were given a choice of payout methods. Being you only have this one way to receive payments you have to get over it or get gone from selling.
When eBay says to ship it's safe to ship because the buyer's payment can't be cancelled by the buyer. It will eventually come down the pike and flow into your account.

Adyen is the payment processor for Etsy, Mercari, and over 3500 other sites. Amazon uses their own payment processor, and it’s similar to Adyen, but doesn’t offer daily payouts.

Why are you waiting 5 to 7 days for payments? You must have your payout set to weekly change it to daily payouts. I get payouts 5 days a week that way. The only sad part is no payments on weekends. No way do I hold the shipment till the money hits my bank. Once its payment received in MP you should ship it. Its better that way for your buyers. ebay spends millions advertising your products for you so fees should not be complained about. ebay has all the traffic to forget the other site you mentioned. Forget PayPal payments they are gone. Set your MP payout to daily.

I’m not waiting 5-7 days.
I even had a Sunday sale included in a Monday payout last week.

1. The "good ol' days" of PayPal are history. Get over it by accepting it and adjusting your business model - or selling elsewhere. Good luck finding an online sales venue that has everything you think you need, and has the worldwide overage that eBay has.
2. It is eBay's business and eBay's choice, not yours, as to how to receive payments, if you want to play in their sandbox.
3. eBay payments can be sent to your bank account in as little as 2-3 business days (weekends and holidays excluded). This is an industry standard, whether online or in a B&M store using a similar payment processor like Adyen.
4. When eBay says it's ok to ship, you ship according to the s/h time you have set up. Your payment is already secured, and is only 2-3 business days away from your bank account, unless you choose to be paid once a week. You can adjust to that trivial 2-3 business days delay, just as the vast majority of successful eBay sellers already have. When you employer paid you every week, two weeks, or even once a month or more, you had no choice but to adjust, right? It's the same here on eBay.
5. It's 12.55%, not 2.55%, plus .30 per transaction and fees on shipping and sales/VAT/GST taxes, in line with other online sites.
6. In August, PayPal just substantially increased their fees paid by their customers.
7. Ebay is a profit-making business, and as such will control most aspects of your sales for their profit on their site if you continue to use it. It's called business and online commerce.
It's your choice to stay, or go. Your shoes are not nailed to the floor - you can walk away at any time, join another online sales venue that you will find things you don't like, or start your own website... Or you can practice Accept > Adjust > Adapt (three words I introduced here about 4 months ago), just like the successful and profitable sellers practice here on eBay.

So you were okay paying 2.9% to PayPal, but eBay charging you 2.55% for the same service causes a conniption?

Granted, I opted into MP a couple of years ago (this month)... and my buyer's payment is my bank deposit in 3 business days. I'm with @duncanvr... I think you have your Payments set to 'Weekly'.
Mine are set to 'Daily' (not to be confused with 'next-day', which was never advertised), and in my experience, I've never had a Payment not move all the way to 'Completed' once it begins 'Processing'.
Regarding your statement, "telling me I have to ship before I even get paid"... shipping funds are immediately available, for what it's worth. Just shimmy down to the bottom of the label page and change your preference... you can change the funding source from your PayPal, and ship using 'Pending' funds. As long as you ship within your Handling Time, you should be gold with eBay.
MP really is doable. I wish you luck moving forward.

Amen to that they have set their payments to weekly needs to be daily. Last week Monday alone I got a $985 payout and then payouts every other day last week. No way would I hold buyer orders till money hits the bank that is a very bad practice by the OP. OP needs to change their mindset to succeed online.

I chose weekly payouts for all of my eBay accounts. Makes bookkeeping much simpler.

And you would be absolutely correct if you owned the site, which you do not own this site, so you have to do as the site owner mandates when you sell on their site. It is no different on ANY of the other larger, similar sites to Ebay. They ALL have their own payment processing programs you MUST use. Ebay was the LAST of the bigger sites to adopt theirs site wide.

Sure they do as they explain in the policies of MP. And you wait that long or longer on the other Big sites too. I realize this is an especially hard transition for Casual Sellers such as yourself. I really is the hardest on this group of sellers.

According to your account, you have been signed up for 19 years. And you are just now noticing that you are paying FVFs and Money processing fees on Shipping??? This has been true for OVER 10 YEARS. This is nothing new to MP at all. I'm unsure where you got this as an issue.
Also they are not charging you 2.55% on shipping, you are being charged 12.55% on they ENTIRE amount the buyer pays you for a transaction. That was likely just a typo for you, as you just forgot the 1.
The fees in MP have NOT increased overall fees. The following numbers represent those that do not have a store and the fee rate for most common categories [not all].
Fees BEFORE going into MP
10.20% FVF + 2.9% PP fees = 13.10% plus 30 cent per transaction fee.
In MP the fees are:
10.20% FVF + 2.35% money processing fee paid to MP = 12.55% plus a 30 cent per transaction fee.
Starting August 2nd, PayPal is raising their fees, so they will be as follows:
10.20 Ebay FVF + 3.49 PP Fee = 13.69% plus .49 cent Per Transaction fee
PP is apparently offering different fees to different sellers, likely depending on size. From what I've seen it is between 2.59% and 3.49%.

CAREFUL. Make sure you do your homework. The grass is NOT always greener on the other side. In Mercari you are REQUIRED to ship your item to your buyer, while Mercari holds your money. They continue to hold it until AFTER your buyer receives the item and OKs the transaction so that your money can be paid out to you.

If you have been told it is time to move into MP, then you need to register as soon as possible. Even if the deadline is weeks away. The sooner your register, it gives them time to process the information and validate things. If you wait until the last minute, then you don't leave them any time to process the information and they will hold any money you get in sales until they can get you processed and verified. So much better to give them as much time as you can.
MP does NOT control SALES or profit. MP has NOTHING to do with either. It is simply a money processing system, nothing more. It has no more control over your sales or profit than PayPal did.

Weekly is fine if you don't mind the wait for funds, the OP is complaining 5-7 days is to slow so should consider daily payouts in their case. I 'd recommend sellers ship items as soon as you get the buyer paid message and not hold funds till payment hits sellers bank.
