What I mostly see in EBAY discussions, especially those conducted by staff, is concern for sellers. What I far less of is any honest criticism of sellers involved in what is clearly exploitation pricing of vital products. Now and then someone will repeat the EBAY soundbite about monitoring the situation, but the reality is that it still goes on, especially lately with masks.
As the history of this crisis is written and examined for lessons, EBAY will have a lot to account for in terms of tolerating unacceptable behavior, from overpricing, increased shipping charges, and misleading product descriptions (many of the overpriced masks are not approved for anything more than dust mites).
I am a member who has bought and sold at various times, but I'm ashamed to be associated with it after this sad, sad, response to genuine needs.

eBay is also canceling sales that violate policy AFTER THE FACT. You don't see those, because you're neither the buyer nor the seller.
Any other suggestions?

Why would you be ashamed because of greedy sellers? Has nothing to do with the rest of us honest sellers.

eBay has made a recent announcement about how they are handling this crisis.
Or, you are free to report any listing that you believe to be fraudulent or to be evidence of price gouging.

Sounds like you should be using the report button on those listings instead of wasting time here posting about it.
Buyers should refuse to buy form those listings.
