I was bidding on a camera bag last week, asking price was $214 USD, I offered $200 which is beyond fair. The seller then rejected my offer with no counter and raised the price to $250. His excuse was "Sorry there was an error in the price, I set it too low"
I reported him to eBay, but I doubt anything will be done about it.

Seller did nothing wrong. He had every right to change the price of the item.

Probably another seller drop shipping from a regular store that didn't realized the prices went up recently due to the tariff taxes and people demanding higher wages.
Anyways I agree with the others that there is nothing to report, sorry.

Apparently you made an offer on a camera bag, not a bid. Seller is under no obligation to accept your offer or even respond to your offer.
It is their item and they can raise the price to whatever they want if there are no bids on it or an accepted offer.
As others have posted, absolutely nothing to report to E-bay.
What the seller did is perfectly legal and acceptable.

My response is always, if you can find widget x for x dollars, here is x times 20 so you can get me 19 of them and 1 for yourself for your time. I have never had someone take me up on it.

You did not place a bid, you made an offer. The seller has the right to reject, accept, counter offer or ignore any offers made. The seller also has the right to increase their asking price. Thus there is nothing for you to report so yes, I doubt eBay will do anything.

SO between the two of this it has happened 100 percent of the time. I want to know where this mystical seller of goods at a great discount is as I have never seen him.

Why did you report this seller to eBay? What did this seller do wrong?
I ask as the seller owns the item that (s)he listed on eBay, and this seller can set any price (s)he chooses for her/his item. In addition, as already stated by others, the seller can choose to accept or reject your offer in addition to send a counteroffer or ignore your offer all together; the seller owes you no explanation for rejecting your offer and (s)he is under no obligation to send you a counteroffer.
As the owner of the item, the seller can raise the price. While you may consider your offer to be “beyond fair”, the seller may not. The seller does not need to settle for your offer which to her/him may not seem “beyond fair”. Ebay is a marketplace on which the seller sets the prices for her/his items: if you want to purchase her/his items then you must pay the price that (s)he sets.
I say this as a buyer, not a seller. Shopping on eBay is no different than shopping anywhere else, and the principles of supply and demand apply. You will enjoy shopping on eBay more if you understand the principles of supply and demand as well as those of the open marketplace. Stop viewing eBay as garage sale for sellers who are desperate for money: eBay is an online marketplace on which sellers list items in order to make a profit, not take a loss.

What specifically do you think the seller did wrong? The bag belongs to the seller until a price is agreed upon and is paid for. If they want to raise the price on THEIR PROPERTY, what exactly is the problem? They are not obligated to accept a price lower than they had it posted for, and they can change that at any time.
