I purchased a crossbow from a seller on thanksgiving day (november 26th) and the estimated delivery date was december 5th, havent gotten any tracking info, and absolutely no response from them as well. It is now the 6th of december, and it still wont let me open a missing item request. What do I do?

Today is still Dec. 5th in Ebay land.
IF/WHEN the latest estimated date of delivery (in Ebay time) has already passed by at least 1 day, you have up to 30 days past estimated date of delivery to file the Item Not Received dispute in the Resolution Center.

Was Dec. 5 the last estimated delivery date or the first one? Sellers are not Required to ship with tracking, though it is in their best interest to do that. What company was supposed to do the shipping UPS, FedEx, USPS? If the shipping method was not expedited, chances are high, even if the seller shipped, the item is is going to be delayed.
Did you check the seller's feedback profile? You have been buying from a lot of sellers based in China. Even though they may list item locations in the U.S., they often ship, or dropship from China.
