Made offer on some dishes , offer accepted , shipping and taxes are over bid price for 7 plates !!! 80 shipping for 7 plates ? suggestions ? can i request different shipping?

The shipping price would have been shown on the listing page BEFORE you made your offer.
Now that your offer has been accepted, it has become a PURCHASE for which you are required to pay in full, including shipping charges + sales tax.
In the future, check the shipping charges before making an offer.

You saw the shipping price for those plates when you made the offer. Shipping price has no connection to item price. Shipping price is based on weight of the box, method of shipping, seller's zip code and buyer's zip code. You can request different shipping, but it may not be possible. For example, I ship all of my items using USPS because that is the most convenient for me. I would have to go way out of my way to ship via UPS or Fed Ex, and for the majority of my items, the shipping would cost a lot more than using USPS.

Shipping costs have become very high all around the past year or so.
Depending on where you are and where the seller is, yes, it can cost $80 to ship dishes (cross-country, for example).
You can talk to the seller, but as the other responder noted, shipping cost was already shown in the listing before you made an offer.

eBay policy is that offers are for the item price only. Whatever shipping is shown in the listing will be added on to the accepted offer automatically. Wasn't the shipping shown in the listing prior to your making the offer?
Any questions about changing the shipping method need to be asked BEFORE committing to buy an item ... or placing an offer or a bid. You've already committed to paying the shipping cost shown.

I'm sorry I went back and checked the listing , shipping is listed as $11.99 , invoice says 80

What's the Item Number of the listing? If no shipping cost was listed ... then you might have a chance of cancelling the sale.
[It is extremely rare for a listing not to show shipping cost for in-country shipping. It can't just pop up by itself after an offer is accepted. eBay software doesn't work that way.]

yes shipping coat on listing is 11.99 , so according to that figure it should be 41.97
, not 80.00

Was the listing for 1 plate with a quantity option to buy more?
7 plates x 11.99 = 83.93
