Different hearts do different things depending on the exact location.
Using the heart outline icon located on an item listing in the search results will add that item to your Watch List.
Using the heart outline icon inside an item listing under Seller info or at the top of a seller's items for sale list can add the seller to your Saved Seller List.
Using the heart outline icon at the top of search results can add the search to your Saved Searches list.
On your Saved Seller list or Saved Searches list, clicking on the blue heart icon will unsave that seller or search and remove it from the list.

When you click the heart next to save this seller - it is the seller, not the item that you are saving. You can see your saved sellers here -

You are very welcome. eBay has been moving those hearts around a bit -- the current location in the lower right corner seems to be fairly unobtrusive. At one point, the eBay app was putting hearts on top of item thumbnails in the search results, and many users were not happy with that particular location.
