Haven't sold in a while, but why is fee deducted immediately and my payout is held?

In my business I'm not able to collect a fee before my service has been delivered. It doesn't seem right to have a seller fee taken from my checking account before I've been paid for that sale. Is there an logical explanation beside T&C? TC
