The post office doesn't scan individual parcels that may be dropped off at the counter or placed in the blue collection boxes upon receipt. That is not unusual. They usually scan later when they are processed but not necessarily upon initial receipt.
USPS continues to be in a complete state of disarray, and your estimate that your package should arrive in two days is out of touch with the current reality. Here are four Priority Mail packages all sent on February the 4th, and are simply sitting in a trailer at the receiving post office and haven't moved an inch in over ten days:

Had I not stood in line and presented those parcels at the counter with a scan form it would appear that I had never mailed them. Your seller in all likelihood dropped the shipment at the PO without a scan sheet.
I have been using UPS now on stamps.com- which for Ground is now competitive and even cheaper than Priority. I screwed up in sending the four above Priority thinking the PO nightmare might be over- when in fact that is far from the case.
Bottom line is your seller probably shipped when he said he did, but who knows when it will arrive. It could easily be sitting in a trailer or storage area somewhere gathering dust.
