Why is UPS all of a sudden an option for my sales? they even have a 66% discount

Today I click the print shipping label link and eBay wants me to use UPS.  I don't want to use UPS. I use FedEx for almost everything because my packages are so heavy. And I have to go right by their store every day. UPS is completely untrustworthy in my opinion since they have broken more screens than any carrier I've used. But my problem is why is this all of a sudden an option when I never listed them before.?

Probably because eBay just signed them on as a shipper and they want to promote them so UPS is happy.

 You DO NOT have to use them. There is a drop down list of all of the options available. Just pick the one you want.

Yes, UPS will sometimes come up as the first choice. But over time you will see that a variety of other services will come up first. Today, for example, I was printing labels for items going First Class Mail (around $4.00) and EXPRESS PRIORITY (at something like $34.00) came up highlighted at the top of the list.

The lesson to be learned is ALWAYS PAY ATTENTION to what you are doing.
