I haven't been able to find an official definition, but I've found multiple examples (such as here or here) suggesting that it's an abbreviation referring to a "Transit Country," for global mail passing through that country on its way to another. In other words, it gets moved from one plane to another, but doesn't go through Customs in that country.

In what context?
GMT usually means Greenwich Mean Time.

GMTC = Greenwich Mean Time Coordinated
or
GMT – Greenwich Mean Time / Coordinated Universal Time (Standard Time)
Also known as: UTC – Coordinated Universal Time, GT – Greenwich Time
Only some locations are currently on GMT because most places in this time zone are currently on summer time / daylight saving time & are observing IST or BST.
I happen to live in CST which I can calculate the difference depending if it's daylight savings or not to the GMTC. That will tell me what time the pkg was scanned at that particular point my time. It's just a universal time coordination. That's why you see it a lot with international pkg tracking.

It's a maritime logistics company:

The parcel in question is probably in a container on a GMTC ship, and ports of calls which aren't the parcel's destination are apparently logged as "transit country".
